Ingredients and Equipment

Step 1: Locate the Rib Bones

Locate the head of the filet, the belly and the tail. Above the belly is a series of rib bones.http://www.youtube.com/watch?v=roX3oZQxqGs

Step 2: Remove the Rib Bones

Use a boning knife or a filet knife to remove the fish's rib bones by inserting your knife beneath the bones and cutting them away.http://www.youtube.com/watch?v=roX3oZQxqGs

Step 3: Remove the Pin Bones

If your fish has pin bones beneath the rib bones, like salmon, you'll be able to feel a stubble-like texture with your fingers. Use a pair of tweezers to pull them out. Now you are ready to grill, saute, roast or poach your filet!http://www.youtube.com/watch?v=roX3oZQxqGs
